The Bikini Cocktail

Serves 10 guests

Ingredients for the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

Ingredients for the Drink (makes 850ml, serving 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing

Directions

Making the Cordial: Combine the listed items in a pan, bring to a simmer, agitating until the sugar dissolves. Next, remove from the burner and leave to cool down completely. Transfer into a sterilised bottle, seal keeping it chilled, it can be stored for about four weeks.

For the Batch Mix: Mix the specified spirits and syrup into a big jug, leave to sit for an hour, then filter it best through a fine cloth, to ensure it's completely strained.

When ready to serve: Add 85ml of the premix into your stirring glass packed with ice, gently stirring lightly for about 60 seconds to chill. Filter to a frosted cocktail glass or equivalent, garnish with the cranberries adding the final touch with a light spray of the essential oil over the drink.
